Fran’s Fabulous Cole Slaw

Salad:

Dressing:

1 head shredded cabbage

½ c oil

1 pkg. Top Ramen noodles

4 Tbsp. honey

4 Tbsp. sunflower seeds

6 Tbsp. rice wine vinegar

½ c toasted slivered almonds

½ tsp dry mustard

 

¼ tsp each salt & pepper

 

seasoning pkg. from Top Ramen

Directions: 

For slaw – break noodles into small pieces and add to cabbage and nuts.

Blend dressing ingredients well and add to slaw about 30 min. before serving in order to allow noodles to soften a bit. 

 

 

  

 

 

 

 

Fran’s Black Bean Salad

1 16-oz can black beans, drained

1 10-oz. pkg. frozen corn, thawed and drained

1 7 ½-oz. can hearts of palm, drain and slice in ¼ “ rounds

½ red onion, minced

½ cup chopped cilantro

¼ cup olive oil

3 Tbsp. olive oil

1 tsp coriander

salt & pepper to taste

 

Optional:  chopped tomato, avocado and/or jalapeno

Directions: 

Mix all ingredients.  Best if refrigerated overnight or several hours before serving.
